The physical heart of The Sustainability Project can be found in the Emerson Brook Forest, Gilsum, NH. Here, an all-volunteer endeavor has created wheelchair accessible trails and edible forest gardens for public use and ecosystem benefit. The center functions as a learning laboratory for edible forest gardening, permaculture design and sustainable community practices.

WICHLAND WOODS, KEENE: Wichland Woods is a unique, local myco-business located in the Monadnock Region of New Hampshire. By educating the public about mycology, it strives to promote people’s awareness about the health and ecological benefits of mushrooms. Through various workshops, Wichland Woods encourages people to expand their gardening realm into a mycological-friendly landscape. They educate the public on the techniques of “backyard mushrooming” and how everyday resources can be used to cultivate their own mycelia network. Wichland Woods have created over a dozen local strains of mushrooms, which are carefully expanded using sterile techniques. By working with other northeast mycologists, they are promoting the health benefits that mushrooms have in our world.

PISGAH FARM, SPOFFORD: Pisgah Farm is a small family farm and is named Pisgah because of its proximity to Pisgah State Park. Since 2013, Pisgah, a small commercial farm, is reminiscent of the small hilltop farms in Italy and southern France. They grow specialty vegetables, cut flowers, perennials and herbs for sale to individuals, restaurants and local markets. They offer Farm to Your Table catering never uses any commercial products. Their cooking classes can happen in your home or at the Farm. All of our classes are small with hands-on-experience. In season we begin in the gardens selecting the vegetables and herbs we will need for preparing our menu before heading into our country kitchen. Our kitchen is equipped the same as most home kitchens. You’ll feel right at ease. Classes are designed around a variety of culinary themes from basics (like stocks, soups & sauces), home canning and preserving, dinner, luncheon or brunch menus and holiday or special occasion cooking. They also share tips on products, equipment and purchasing for your home kitchen.
